I am looking for a Pasta Fagioli recipe using ham hock or shanks. My Italian grandmother used to make it this way and it was the best!

I make a version of pasta fagioli vegetarian style.

I use red onions, lots of celery and I roast red peppers for it too.

I use stewed tomatoes and paste, veggie stock and I use chick peas too...

Lots of fresh garlic too!

Yum! Looks great!

I'm glad I'm not the only one to sub out tomato paste for tomato sauce in recipes! :) I tend to keep stocked up on tomato paste and canned tomatoes, but never tomato sauce . . . I use that rule of thumb constantly!

Best,
Sarah

PS - I'm hosting a crockpot carnival next Friday (my first!) and this recipe would be perfect! Drop by!
