Sometimes my husband requires expensive dinners. His favorites include steak on the grill, pork tenderloin, and any-and-all roasts.

However, that much meat requires an equal and opposite El Cheapo Dinner.

Probably the most popular El Cheapo Dinner around here is quesadillas.

Ingredients:

Corn tortillas
Mozzarella or cheddar cheese or really, any kind of cheese you’re fond of

(Except cottage. I don’t think that would go over well.)

Fillings: Leftover peppers, onions, meat (including deli lunch meat)

Dipping sauces: Salsa, barbeque*

  1. Chop peppers, meat, and any other filling. Shred cheese.
  2. Place tortilla on saute pan, turn heat to medium. Layer shredded cheese and toppings. Top with second tortilla.
  3. Heat 3-4 minutes. Flip. Heat 2-3 minutes. Slice (pizza cutter works best) and enjoy!

We usually enjoy this meal with popcorn and juice. Mmmm-mmmm cheap.

*Barbecue sauce on quesadillas?! you ask? When the cheese is mozzarella and the meat is chopped chicken, then yes. By all means, the sauce of choice is barbecue.
