To be honest, I was a bit torn as to which recipe pile from which I should choose for this category.

Because most of what I snack unhealthily on is not technically a snack. It is a dessert that I munch on throughout the day.

But since a “dessert” is unhealthy and “something you munch on throughout the day” is a snack, I hereby declare that “desserts you munch on throughout the day” are unhealthy snacks.

My unhealthy snack:

Half-Whole Wheat Frosted Sugar Cookie Cutouts

Ingredients:

2/3 c. (or 10 2/3 Tbs) butter, softened (just leave it on the counter)
3/4 c. granulated sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1 tbs milk
1 tsp vanilla
1 c. all-purpose flour
1 c. whole wheat flour

  1. In a large mixing blowl, beat butter on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg, milk, and vanilla until combined. Beat in as much of the flour as you can with the mixer; stir in the rest. Divide dough in half. If necessary, cover and chill dough 30 minutes or until easy to handle.(I’ve been known to leave in the fridge for a week.)

    (It still turned out great.)

  2. On a floured surface (I’m supposed to say “lightly floured” but that’s just not how I do things. As agitated as I get when cookies stick to the table, I figure it’s best for all involved if the table is HEAVILY FLOURED), roll half the dough at a time until 1/8 inch thick. If dough sticks to the rolling pin, sprinkle more flour on the dough. Cut dough with desired cookie cutter (preferably 2 1/2″ cutter.) Place 1 inch apart on an ungreased cookie sheet.
  3. Bake in a 375 degree oven for 7-8 minutes or until edges are firm. You won’t be able to tell much of a difference in color since you used whole wheat. If you try to remove them from the pan after 7-8 minutes and they are not quite done, just let them set on the pan for 2 minutes and try again. The heat from the pan should cook them the rest of the way without them getting crispy like they would in the oven. Transfer to a wire rack and cool.

The Frosting

Ingredients:

The recipe I have calls for:

1 c. sifted powdered sugar
1/4 tsp vanilla
1 tbs milk

I say triple or quadruple this and you should be good.

In a large bowl, combine powdered sugar, vanilla, and milk. Stir in additional milk, 1 tsp at a time until icing is the desired consistency. Make sure it’s not too runny. My husband and I feud over this everytime. I say his is too runny. He says mine is too thick. The truth, it is relative.
