5c white flour
5c whole wheat flour
10 Tbs sugar
10 tsp baking powder
2 1/2 tsp baking soda
2 1/2 tsp salt
- Add 2c milk to 2 Tbs lemon juice in a glass container and let set 5 min.
- Beat 2 eggs.
- Combine milk, eggs, and 4 Tbs oil.
- Combine milk mixture with 2c pancake mix.
- Mix just until moistened.*
*Batter will be lumpy. Lumps will disappear when the batter cooks. It’s hard to believe, but it really does work. Promise.
Each batch serves six. There are five batches in this bulk recipe.
I don’t have the means to compare, but I’m guessing this is cheaper than Bisquick (correct me if I’m wrong). I do know for sure, however, that it’s healthier, as it is half whole wheat flour.
(And, tip: I put clear tape down on that plastic container before writing on it in permanent marker.)
